Asian Cucumber Salad

Ingredients
1 cucumber, peeled if desired1T rice wine vinegar1/2 T sesame oil1/2 T sugar1t soy sauce1/4t saltcrushed red pepper flakes, to taste
Directions
Slice cucumbers and put in colander. Add 1T kosher salt and toss to combine. Let cucumbers sit so excess moisture can drain out, up to 1 hour. Rinse cucumbers under cool water to remove salt.

In a medium bowl, whisk together all other ingredients and add cucumbers. Stir to combine. Can make ahead of time but best served same day.
