Oven Fried Chicken with Honey Mustard Glaze

Chicken1.5 pounds boneless skinless chicken breastsSalt and pepper to taste1 egg1/4 cup milk1/2 c panko1/4 c canola oil1 c flour1t smoked paprika (or to taste)Glaze1/4 c low fat mayonnaise2T honey2T dijon mustard
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper and set aside.
To make honey mustard glze, whisk together mayonnaise, honey, and mustard in small bowl. Set aside.
Season chicken with salt & pepper to taste.
In a bowl, whisk together egg and nilk. In another bowl, combine Panko, paprika, and canola oil.
Working one at a time, dredge chicken in the flour, dip into the egg mixture, and dredge in the Panko misture, pressing to coat.
Place chicken on prepared baking sheet and bake for 25 minutes, until chicken is completely cooked through.
Serve with honey mustard glaze on the side.
