Smoky Chicken, Peppers & Spinach Pasta Salad

12 ounces Fiber Gourmet rotini1/3 cup honey1/2 cup cider vinegar2T olive oil for sauce, 1T olive oil for cooking chicken2T lemon juice2T packed brown sugar1T smoked paprikasalt & pepper to tastecayenne pepper (optional and to taste)1.25 pounds boneless skinless chicken breast, diced into bite-sized pieces2 cups fresh baby spinach leaves, chiffonade1 red bell pepper, diced1 yellow bell pepper, diced
Cook pasta according to package directions. Set aside.
To a medium bowl add honey, vinegar, 2T olive oil, lemon juice, brown sugar, smoked paprik, salt, pepper, and stir to combine.
Cook chicken in 1T olive oil over medium high heat for 5 minutes, stirring as needed. Carefully add the sauce and allow to bubble for 3-4 minutes or until chicken is cooked through.
Add spinach, peppers, chicken and all the sauce to the bowl of pasta and stir well to combine. Taste for seasoning and serve either warm or cold.
