Yummy Vegetarian White Bean Chili

3 cans of white beans (navy, cannelini, etc.)1 large onion, chopped1 green pepper, chopped3 jalapeños6 large cloves of garlic, mincedzest of 2 limesjuice of 1 lime1 cup cilantro, chopped1 can, 28oz, of diced tomatoes, not drained4 cups vegetable stock3 cups watersalt and pepper to taste
Heat dutch oven over medium heat and add onion, green pepper and jalapeño to sauté. Add 1-2 tbs of vegetable stock at a time to keep from sticking. Sauté for 10 minutes. Add beans, tomatoes, garlic, water and broth. Bring to a boil, then reduce heat to low and simmer, coverered for 20 minutes.
Add lime zest, lime juice and cilantro. Simmer for another 3-4 minutes then dish into bowls and enjoy!!
