Oatmeal Baked Cups

Ingredients
2 Eggs3 cups Rolled Oats, Old Fashioned1/2 Cup Applesauce2 tsp Baking Powder1 cup Brown Sugar, packed1 tbsp Cinnamon, ground1sp Vanilla Extract1sp coconut extract1/4 cup Vegetable Oil (4 tbsp)1 1/2 Milk Lactose fat Free1 cup Raisins
Directions
Preheat oven 350. line your muffin pans. In a large bowl whisk the eggs, oil, and brown sugar. Do until sugar dissolves. Add applesauce, Milk, Vanilla and coconut extract, and cinnamon. Whisk until combined. Stir in oats and Baking powder.
Fill in muffin pan with mix. Add favorite toppers. Bake in over for 30 minutes. 5 minutes to cool.
