Left Over Veggie Frittata

1 cup 1% low fat cottage cheese 2/4 cup Mozzarella Cheese, whole milk, shredded 4 cups fresh spinach, fresh 1/2 cup cooked sliced zucchini 1/4 cup shredded raw carrots 8 large eggs seasonings to taste (I just used garlic)
Preheat oven to 350.
Combine all ingredients except eggs and stir together. Whisk eggs in a separate bowl , then add to the vegetable and cheese mixture.
Coat an over safe pan with butter flavored spray, & pour mixture into pan. Bake for 25-30 minutes or until the center is set and a knife inserted into it comes out clean.
Serving Size: Makes 8 slices.
