Chili Con Elote

Ingredients
1 medium onion, chopped1 garlic clove, chopped OR minced2 T olive oil1 medium green bell pepper, diced1 tsp chili powder1 tsp cumin powder1 cup chopped tomato OR 2 T tomato paste1 cup fresh corn (or frozen corn)1-1/2 tsp salt1 tsp oregano (dried)4 cups cooked beans (kidney, black OR pinto)
Directions
Saute onions & garlic in oil until soft. Add green pepper & spices, sauce another 2-3 minutes. Add tomatoes & corn.

Mash 2 cups of the beans and add to the pot along with the whole beans. Add salt & oregano.

Simmer 30 minutes

Serving Size: makes 5 - 6 (1 cup) servings
