vegan pancakes made w/water

Ingredients
2/3 cup whole wheat pastry flour2 tsp. baking powder1/2 tsp. vanilla extracta little more than 2/3 cup, cold water4 TBSP Low-Sugar Smucker's Strawberry jam
Directions
combine dry ingredients in a bowl
add water. mix
add vanilla. mix
heat a pan on medium high. spray lightly with cooking spray.
ladle pancake batter onto pan & cook like normal pancakes.
(about 2 minutes each side.)

once cooked, top each pancake with 1 TBSP of jam

Serving Size: 1 serving = 2 pancakes. makes 4 thick pancakes, medium-small in size
