Homemade Tangy Coleslaw

Ingredients
5 cups Fresh Express Cole Slaw Mix (w/ red cabbage, green cabage, and carrots)1/2 cup red onion, finely chopped (optional)2 Red Delicious apples, finely diced1/2 cup fat-free mayonnaise1/3 cup white vinegar1/4 cup sugar2 TBS + 2 tsp Dijon mustard1/4 tsp saltpinch white pepper
Directions
Combine coleslaw mix and apples in a large bowl, mix well.

Combine remaining ingredients in a small bowl and mix well to make dressing.

Pour the dressing over the slaw mix and toss until evenly coated. Cover tightly and chill before serving.

Makes appx. 12 1/2 cup servings.

    I made it with apple cider vinegar and added some shredded carrots. Also used 1/2 head of cabbage. - 5/19/08
