• 21 ounces cream of mushroom soup • 1 cup mayonnaise• 1/2 cup milk or Half & Half• 1 cup diced yellow onion • 1 cup diced celery • 12 ounces albacore tuna (or Costco canned Salmon)• 12 ounces cooked egg noodles • 1/2 cup shredded cheddar cheese • 2 to taste salt and pepper • Juice of one lemon• 4-6 oz. of cream cheeseAdded: Chopped Onion, Peas, Garlic, Mushrooms, Red Bell PeppersTopping: Crushed cracker crumbs and parmesan cheese and shredded Cheddar/Monterey Jack cheeseForgot the mayo - it was still great!
Directions:
1. Mix the cream of mushroom, mayonnaise and milk together in a large bowl.
2. Add the diced celery and onion.
3. Fold in the tuna, followed by the cooked egg noodles and shredded cheddar cheese.
4. Salt and pepper to your taste.
5. Place in a casserole dish. Cook at 375 degrees for about 40-45 minutes, just until the top starts to brown.
Serving Size: Makes 6 1-cup servings
