Plantains with Peanutsauce

Ingredients
2-3 plantains, raw1c ground peanuts2.5c water1 tsp corn oil1 tomato1 onion.5tsp salt1 dash pepper1 tsp dried parsley.25 tsp nutmeg.25 tsp ground cummin seedother spices if liked
Directions
cut onion & tomato into small cubes. heat oil, fry onion until auted well, add tomato, slowly add the spices & fry a bit. Add the peanuts & the water

simmer for 45 minutes until peanuts start settling on the bottom of the pot, add plantains & cook until plantains are soft, usually about 5-7minutes.

Serve immediately.
