1 tbsp olive oil1 medium onion sliced2 zucchini squash chopped1 summer squash chopped 2 potatoes chopped1 12 ounce pkg. string beans2 cups bulgar wheat2 cups fat free chicken broth2 1/2 tbsp tomato pastesalt and pepper to taste
Add 1 tbsp of olive oil to pan. Slice medium onion and two potatoes and cook for about 7-8 minutes. Add chopped summer and zucchini squash along with string beans. Once the squash is soft, and 2 cups of bulgar wheat with 2 cups chicken broth, add 2 1/2 tbsps. tomato paste. Stir well. Bring to a boil with cover on pan. After about 3 minutes, turn stove off and leave cover on pan.
