Cuban Yucca Con Mojo de ajo

INGREDIENTS:1 1/2 pounds yucca, peeled, halved and cut into chunks (Frozen yucca may be available in Latin markets in your area)1 lime (juice from)6 cloves garlic mashed into 1 teaspoon salt 1/3 cup lemon juice1/2 cup olive oil1 onion, chopped fine
Place yucca in a large pot; add water until yucca is just covered. Add salt and lime juice, and bring to a boil. Reduce heat, cover, and simmer until tender about 30 minutes, Yucca should be firm, but soft enough to cut with a fork. Drain.
In the center there may be rope type strings, and they should be removed core from the yucca.
Mash garlic cloves. Add garlic, lemon juice, and onions to olive oil in a separate saucepan, heat until bubbling, then turn off heat.
Sauté Yucca with about a 1/2 cup of Mojo Sauce over medium heat until barely browned, but not crisp! Serve immediately.
