Paleo Breakfast Cupcakes

6 eggs1 avocado6 slices of thin sliced ham (Nitrate free preferred) dash of cayenne pepper
1) Preheat oven to 400F
2) In a muffin tin or a cupcake tray line with cupcake liners or spray with cooking spray.
3) Fill each liner with a slice of ham and a slice of avocado.
4) Crack an egg over the ham and avocado in each of the cups.
5) Place in the oven for 20 minutes. The whites should be firm to the touch. If you don't want the yolk to be to firm cook for about 15-16 minutes.
6) Once done sprinkle a dash of cayenne pepper on top for a little kick!
Serving Size: makes 6 'cupcakes'
