Vegan Soul Power Red Wine Stew and Dumplings

Ingredients
1 onion1 leek2-3 garlic cloves4 med potatoes4 carrots3-4 chopped tomatoes1 tsp each paprikathymesagerosemary2 cups red wine2 cups broth1 14oz can of white beans3 T flourDumplings:1 leek1 cup flour3/4 tsp baking powderpinch of salt3/4 cups soy milk
Directions
Chop all veggies. Saute 1 leek and onion in big soup pot while saute other leek in separate pan for the dumplings. In soup pot with leek and onion add garlic and cook til fragrant. Add rest of veggies and spices, stir to cover with spices. Add in wine and broth. Boil and let cook for 30 minutes. Mix all dumpling ingredients in a separate bowl with other sauteed leek. Drop into soup pot in spoonfuls. Cover pot and cook for 15 more minutes until dumplings are cooked through.
