Flax Muffins

Ingredients
1 1/2 cups ground flaxseed1/2 cuo whole wheat flour1/2 cup white flour1/2 cup brown sugar4 teaspoons baking powder1 teaspoon cinnamon1/2 teaspoon nutmeg1/2 teaspoon salt1 1/2 cups skim milk2 tablespoons olive oil1 eggfinely grated peel of 1 orange1/2 teaspoon vanilla1 1/2 cup raisins
Directions
Preheat oven to350 degrees,

In large bowl stir dry ingredients together. In another bowl whisk other ingredients until blended. Pour into flour misture. Stir just until combined. Stir in raisins, Put in 12 muffin tin.

Bake 25 minutes. Let stand 5 minutes before removing from pan, Store at room temperature for up to 2 days or freeze up to 2 weeks.
