Vegetable Sausage Stuffing

Ingredients
LightLife Gimme Lean Ground Sausage Style Veggie Protein - 6 ozBrown Rice (cooked) - approx 1 cup1/2 large yellow onion1/2 Tbsp EVOO1/3 frozen cough2/3 frozen peas
Directions
Saute onions in EVOO until brown. Add meat substitute and break up with wooden spoon, brown for 5 minutes. Add corn, peas and any extra veggies such as zucchini inside that was scooped out or chopped bell pepper from tops. Mix with cooked brown rice and remove from heat. Use to stuff veggies.
