Oatmeal Pancakes

Ingredients
2 c oatmeal, ground to flour 1/2 ts salt1/4 tsp cinnamon1/8 tsp nutmeg2 eggs1 c milk2 tbsp honey
Directions
Grind the oatmeal to a flour consistency in a food processor. Add the salt, nutmeg, and cinnamon. In a separate bowl, beat eggs and add milk and honey. Combine dry and wet ingredients. If desired, allow to sit 5-10 minutes to allow the oats to soak. Spoon onto a hot pan or griddle and cook until browned on each side.

Serving Size: Makes six 6" pancakes, 2 per serving
