Asian Almond Slaw

2 C shredded fresh green cabbage - Purple also works or a mix is great, whatever you have1 large sweet red pepper thinly sliced15 almonds sliced, slivered or chopped - your preference1 C diced fresh pineapple or use canned in own juice1 Tbsp cider vinegar1/4 C (2 oz.) plain greek yogurt - varies with taste, use less if you like less dressing, more if you like more1 Tbsp Rice VinegarSalt and Pepper to taste
Shred cabbage and thinly slice red pepper. Place in large bowl.
Mix vinegars and yogurt and season to taste. Add to cabbage/pepper and mix thoroughly.
Add pineapple and stir. Sprinkle almonds on top and serve immediately or refrigerate but wait to add almonds until ready to serve. (Cabbage and peppers will "wilt" a bit in the frig but some enjoy that, either way works well)
Serving Size: Makes 2 large servings or 4 smaller portions - Calories based on 2 servings
