cooking spray1/2 C *Egg - Eggbeater - Southwestern, 1/4 C chopped onion1/4 C Sweet peppers (bell), chopped1/4 C Fresh Chopped Zucchini,1/4 C chopped Roma Tomato, *Cilantro, Fresh, 1 tbsp choppedSpinach, fresh, 1 cup chopped1/2 oz. Feta cheese, 1 small chopped Jalapeno (optional)
Spray non-stick pan with oil. Heat over medium heat. Add onion to pan cook until translucent. Add peppers and zucchini cook 1 or two minutes. Add spinach and cilantro spraying them lightly with cooking spray once they have started to wilt down add tomatoes. sprinkle top with feta cheese when cheese begins to melt pour egg beaters on top, cook until set.
