Eric's Spanish Rice

Ingredients

3 cups Medium grain rice1 cup green bell peppers3 tbsp Olive oil2 tbsp Goya Adoboedash of salt3 cups of water10 Tblsp Cilantro.5 cup Goya sofrito sauce1 cup green pigeon peas1 packet Sazon
1. Chop bell peppers and cilantro.
2. Mix all ingredients, except for RICE & WATER, in a rice pot and let simmer.(Heat medium)
3. Add water. Let come to a boil. (Heat high)
4. Add rice. Stir only a few times. Water will evaporate.(Heat High) (Don't over stir)
5. When water level is at line of rice, cover with foil an lid, and lower temp as low as you can.
6. Let cook for 20-25 minutes. Stir & let cook for 10-15 more minutes.
