8 cups oats (6 c quick; 2 c old fashioned)1 cup sunflower seeds1 cup sliced almonds1 cup pecan halves2 cups shredded coconut2 cups raisins or dried cranberries1 cup honey1/2 cup coconut oil1 T cinnamon1 T vanilla extract1/2 tsp maple extract1/2 tsp salt
Preheat oven to 325 degrees. Stir together all dry ingredients in very large bowl. Combine last six ingredients in saucepan. Cook and stir until combined. Then pour over dry ingredients and stir until thoroughly coated. Line 2 baking sheets with foil and spray foil with nonstick spray. Divide granola between the two baking sheets and spread evenly. Bake at 325 for 20 minutes. Allow to cool. Store in sealed containers.
