Ingredients
Directions
2.5 cups Oats, finely ground1 cup walnuts, finely ground1 cup fat free vanilla yogurt3 eggs3 mashed bananas1 pint fresh blueberries1.5 tsp baking powder.5 tsp baking soda(optional) 1 tsp cinnamon or pumpkin pie spice(optional) .5 cup sugar for sweeter muffins
Wash as set blueberries aside.
Heat oven to 375.
Grind up dry ingredients and combine in a large mixing bowl. Combine wet ingredients in a separate bowl (I use a stick blender). Pour wet ingredients into dry and mix together well with a spatula. Fold the fresh blueberries in last.
Grease a muffin pan with butter or any baking spray to your liking. Fill the muffin pan. There is enough extra batter to make a few more muffins, or I prefer to make a batch mini muffins. You should have enough batter for 12 minis.
