Chicken and Potato Salsa Verde

1 Tbs canola oil1.5 lb boneless skinless chicken breast, trimmed and thinly sliced32 oz diced potatoes16 oz salsa verde1 white onion, chopped1 Tbs minced garlic
- Heat oil in a large skillet at 400 degrees.
- Add onions and chicken.
- Turn frequently to get all sides of the chicken cooked through, about 6 minutes.
- Add potatoes and garlic and mix together.
Continue cooking 8 minutes. Do not mix or stir, so that the bottom browns nicely.
- Uncover and add the salsa verde. Mix again and continue cooking three minutes.
Serving Size: makes 5 servings
