No-Joke Spinach and Artichoke Burger

1 lb ground turkey or chickensalt and pepper to tastezest of one lemoncouple of handfuls of parm cheese2 garlic cloves finely chopped1 - 10oz package frozen chopped spinach, thawed and wrung dry in kitchen towel1 T. fresh thymeEVOO 4 thick cut slices of crusty bread4 1/2-inch-thick slices of beefsteak tomatoone 14oz. can artichokes in water, drained and thinly sliced8 thin slices of provolone cheese
Mix ground chicken/turkey in med. bowl and season with salt and pepper. add lemon zest, parm. cheese, garlic (finely chopped) spinach, thyme and drizzle of olive oil. Form into 4 patties and cook the burgers until firm and cooked through. 6 min on each side medium high grill. grill 4 slices of italian crusty bread. top with tomatoes and season tomatoes with salt and pepper. in last two minutes of cooking divide the artichokes evenly among the burgers, then cover with 2 slices of provolone. melt cheese. place burgers on tomatoe slices.
