Pasta with Artichokes and Fresh Ricotta

2 tablespoons extra-virgin olive oil, divided¼ cup onion, chopped4 cloves garlic, minced7 oz. turkey sausage3 cups uncooked whole-wheat penne pasta2-15oz cans artichoke hearts1-pint cherry tomatoes1/4 cup chopped fresh flat-leaf parsley1/2 teaspoon freshly ground black pepper1/2-cup part skim milk ricotta cheese3/4 cup shaved fresh Parmigiano-Reggiano cheese
1. Heat 2 tablespoons oil in large skillet over medium heat. Add garlic and onion to pan.
2. Once onions are translucent add in chopped sausage.
3. Cook pasta according to package instructions. Drain pasta in a colander over a bowl, reserving 1/2 cup cooking liquid.
4. Combine reserved cooking liquid, pasta, 1-tablespoon oil, artichoke hearts, cherry tomatoes, parsley, and pepper in a large bowl.
5. Add ricotta cheese in spoonfuls, stirring gently to combine.
6. Serve with 2 tablespoons Parmesan cheese.
