2 medium Sweet potato, scrubbed, unpeeled, cut into 1/2 in. strips1 tbsp olive oil1/4 tsp each: onion powder, garlic powder, chili powder, paprika, and cuminGenerous sprinkling of fresh ground black pepper1/2 tsp Sugar
Preheat oven to 450, and cover a baking sheet with parchment paper.
Mix potatoes, oil and spices thoroughly in a medium bowl until spices and oil are evenly dispersed. Spread potatoes in a single layer. Bake 20 to 30 minutes, turning fries every 10 minutes. Adjust time to reach desired crispiness without burning. Serve with ketchup or your favorite dipping sauce.
