Munroe's Coconut Hawaian Chicken

Ingredients
2 tsp Ginger, ground 1 tsp Pepper, red or cayenne 9 thigh, bone and skin removed Chicken Thigh 12 slice, thin (3-1/2" dia x 1/2" thick) Pineapple, fresh 2 tsp Black Pepper (Ground) 8 serving RICE - Dynasty Jasmine Rice 1/2 cup cooked 5 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can) .5 cup Granulated Sugar 2 tbsp Soy Sauce 12 tbsp Nakano Seasoned Rice Vinegar
Directions
marinate chicken in 1 can of coconut milk, black & red pepper and ginger. cook rice in remaining 2 cans of coconut milk. Grill chicken and pineapple slices. Combine vinegar, sugar and soy sauce in sauce pan and simmer for 5 minutes to mix and reduce. Offer as glaze in gravy boat to main dish.

Serving Size: 1 thigh, 1/2 cup rice, two pineapple slices and glaze.
