Baked Zucchini Bites

Ingredients
2 medium zucchini, cut into 1/4-inch slices1/2 cup seasoned bread crumbs1/8 tsp black pepper2 tbsp grated parmesan cheese2 egg whites
Directions
1. preheat the oven to 475-500 F (depending on your oven).
2. In one small bowl, stir together the bread crumbs, pepper, and parmesan cheese. place the egg whites in a separate bowl.
Dip the zucchini slices into the egg whites, then coat in the breadcrumbs. Place on a greased baking sheet.
3. Bake for 5 minutes in the oven, then turn over and bake for another 5 - 10 minutes, until browned and crispy.

    These were great. I halved the recipe because I only had 1 zucchini. I added some onion powder & a garlic/parsley salt blend. My hubby grilled some which came out really good & I baked some. The ones he grilled were crispier than the baked ones. Very, very good. Need to buy more zucchini! - 10/7/09

    These were FANTASTIC! I changed the recipe a bit. I used corn flakes instead of bread crumbs, one egg and just parmesan. So delicious. Next time I will throw some garlic powder in with the cheese and cereal. - 2/27/10
