4 serving Foster Farms Thigh Fillets (4 oz.) .25 tsp Cumin seed .5 tsp Garlic powder .1250 tsp Pepper, black .1250 tsp Pepper, red or cayenne 1.5 tbsp Olive Oil .5 serving Yellow Onion Small (by TRUDKM7) 37 gram(s) bell pepper, red, sweet, raw 0.75 tsp Salt-Free Mrs. Dash Seasoning Blend (by WALKINGATHOME) .75 cup Rice, white, long-grain, regular, raw, enriched 1 clove Garlic .75 serving Trader Joe's Organic Low Sodium Chicken Broth 1 cup 1 serving Hunt's No Salt Added Tomato Sauce (1/4 c.) .5 serving 1 Med. Green Bell Pepper
Combine first 4 ingredients in large ziploc bag.
Add chicken & shake well
Heat oil in pan...brown chicken on all sides
Remove chicken to plate
Add onion, peppers & 1/4 tsp. salt free seasoning to pan
Cook until vegetables are softened.
Add rice & garlic & cook until rice is lightly browned.
Combine chicken broth, tomato sauce & remaining salt free seasoning in a bowl.
Add mixture & 5 oz. water to pan. Stir to make sure rice is covered in liquid.
Add chicken & juices to pan
Bring to boil, reduce heat.
Cook until chicken is cooked through, rice is tender & most of liquid is absorbed....about 35 minutes.
Let stand about 10 minutes before serving.
