Ingredients
48 oz Beef, 90% Lean Ground Beef from Sirloin 2 cup, chopped Onions, raw 3 tbsp Coriander seed 2.5 tsp Salt 24 oz Beef, 90% Lean Ground Beef from Sirloin 1.5 cup, chopped Onions, raw 16 tbsp Parsley 2.25 cup Bulgur, dry 0.75 cup Semolina Flour (by ECHO_E) 1.5 tbsp Allspice
Directions
Combine 3# beef, 2 c processed onions, coriander, semolina, bulgur, and 1.5 tsp salt. Divide into 16 - 1/2 c portions. Combine 1.5 # beef, 1.5 c chopped onion, parsley, allspice, 1 tsp salt. Flatten one portion of bulgur mixture, top with 1/2 c parsley mixture, then flatten and seal one portion bulgur mixture on top. Repeat with remaining portions. Boil in beef or lamb broth 20 min.
