Chicken with Orange Marmalade Glaze

2 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted 2 tbsp Orange Marmalade1 cup Orange Juice 1 tbsp Soy Sauce World Market All Purpose Seasoning (to taste)3 tsp Corn Starch3 medium (4-1/8" long) Scallions, raw SaltPepperOlive Oilbutter (optional)
Salt and Pepper the chicken breasts. Add 1 Tbsp Olive Oil to a heated skillet and cooked the chicken through. Set aside. While the chicken is cooking, mix together the marmalade, orange juice, soy sauce, corn starch and All Purpose Seasoning in a bowl. Cut each scallion stalk in half, then into 1-inch pieces. Heat 2 tsp Olive Oil or 1 pat of butter in the same skillet you used for the chicken. Add the chopped scallions to the pan and cook 2-3 minutes over med heat, or until softened. Add sauce mixture to the pan. Boil until thick. While sauce is boiling, cut cooked chicken into bite-sized pieces. Add the chicken to the sauce once it is thickened.
