Good For You Whole Wheat Waffles

1 3/4 c. whole wheat flour1/2 tsp. salt1 Tbsp. baking powder2 eggs (eggbeaters or the equivalent amount of egg whites would work too)1 3/4 c. plain, unsweetened soy milk1/2 c unsweetened applesauce1 Tbsp. sugar (or equivalent)1 tsp. vanilla extract
Combine dry ingredients in a large bowl or pitcher. In a smaller bowl or pitcher, combine wet igredients. Pour the wet ingredients onto the dry ingredients all at once and stir to blend.
Pour batter into preheated waffle maker that has been sprayed with Pam. (A non-stick one is best.)Cook until done (3-5 minutes, depending on your machine)
This makes 7 small or 5 regular-size waffles.

Note: I did not have applesauce on hand, so I made with olive oil. The taste is good, but the batter was fairly thin. I may try again if I have applesauce on hand, but I think I'll try other recipes, too. - 5/4/08

Using applesauce will make the batter a bit thicker. Applesauce is also fat free, unlike oil.
