Roasted Peach BBQ Sauce

3 medium peaches, halved and pitted½ sweet onion, peeled and halved1 tbsp olive oil½ cup cider vinegar2 tbsp brown sugar2 tbsp honey6 cloves black garlic 1 (6 oz) can tomato paste½ cup apple juice1 tbsp Dijon mustard½ tsp black pepper½ tsp smoked paprika½ tsp salt
Heat oven to 425F
Place peaches, onion and garlic, cut side up (where applicable!), on a parchment-lined baking sheet and drizzle with oil.
Roast for 25 minutes, shaking pan halfway through.
In a large pot, combine the vinegar, sugar and honey and bring to a simmer, stirring to dissolve the sugar.
Add the remaining ingredients and the roasted mixture and simmer 25-30 minutes.
Puree with an immersion blender until smooth and can 15 minutes in a water bath.
Serving Size: Makes 4 cups, 32 (2 tbsp) servings
