Gluten free turkey and ricotta meatloaf

Ground Turkey, 300 gramsRicotta Cheese, part skim milk, 300 grams Mortadella (GF approved) 2 slicesEgg, fresh, 1 large (whisked)Parmesan Cheese, grated, 1 tbsp Butter, unsalted, 1 tbsp Salt, 1 dashPepper, black, 1 dash
Preheat oven to 180°C
Mix the ground turkey with the ricotta, the whisked egg, salt, pepper and parmesan cheese( the more the better for taste!)
Form the mix into a large sausage shape and wrap in the mortadella, securing lighly with cocktail sticks or with string.
Grease baking tray with butter place in oven with meatloaf for 40 minutes.
Can be eaten hot or cold.
Makes 4 large portions
