Shrimp and Melon Salad

500 grams king prawnsHalf a Melon100g of salad leaves (your choice, I use lattughina)Olive oil1 lemon1 root of fresh gingera pinch of salt
Peel and clean the prawns. Cook them in boiling water with lemon juice for about 1 minute.
Remove the melon skin and slice the fruit thinly.
Peel and grate the ginger.
Prepare an emulsion with what is left of the lemon and the oil: Squeeze the lemon an place the juice in a bowl with a pinch of salt, and stir vigourously until the salt is dissolved. At this point slowly add the oil, mixing contiuously, and flavour with the grated ginger to taste.
Place the salad in the middle of a plate. Arrange alternating melon slices and prawns around the edge and dress with the ginger sauce.
