Eggplant Burger

Ingredients
2 eggplant, peeled (yield from 1 Eggplant, fresh 12 oz TVP (textured vegetable protein, dry 8 oz Vegan Cheeze (mozzarella style shreds) 5 clove Garlic .5 cup, chopped Onions, raw 0.25 cup All Purpose Baking Flour, Gluten Free/ Bob's Red Mill
Directions
cut eggplant into cubes sauté with onion and garlic , pulse in food processor until it comes together, do not puree. add TVP and vegan cheese, salt, pepper and parsley to taste. Form into patties dust with flour on each side. Chill 30 minutes and then either sauté or bake till a golden brown.
