Panang Tofu

Ingredients
1 block of firm tofu1 cup of coconut milk2 tablespoons sugar2 tablespoons curry paste4 cups of cooked jasmine rice
Directions
Makes about 4 servings.

Cut and bake tofu how ever you like it. Put 1/2 the coconut milk in a pan over low heat, add the curry paste and stir until disolved. Add the tofu and the remaining coconut milk, heat through and serve on a bed of rice.
