Quick Chicken Parmesan

Bread crumbs, dry, grated, seasoned, .5 cup *Kraft Reduced Fat Parmesan Cheese (grated), 6 tsp Saltine Crackers, unsalted (Saltines), 6 cracker Chicken Thigh, 4 thigh, bone and skin removed Ragu Spaghetti Sauce (tomato sauce), 0.5 cup *Extra Virgin Olive Oil, 2 tbsp Zucchini, 2 cup, sliced Onions, raw, .5 medium (2-1/2" dia) Green Peppers (bell peppers), .5 cup, strips
Preheat oven 400 degrees.
Combine Bread crumbs, Saltines and 2 Tbsp. of Reduced Fat Parmesan cheese in a large zip lock bag. Coat boneless skinless thighs in egg and place in bag. Shake to coat. Use 1 tbsp. Olive Oil in skillet and brown evenly. Place Chicken in 8" baking dish. Use 1/2 cup marinara sauce to lightly cover each thigh. Sprinkle reduced fat parmesan cheese over sauced chicken. Bake in oven for 20 minutes.
Meanwhile, place 1 tbsp. olive oil in skillet and sautee Zucchini, Onion and Green Peppers.
Serve Baked chicken w/ sauteed veggies sprinkled with parmesan cheese.
