Kale and Bean Stew

Ingredients
1 tbsp olive oil1 cup chopped onion1 tbsp chopped garlic1 tbsp oregano2 Bistro Sensations Habanero Chicken Sausages or chicken/turkey sausage of your choice - sliced thin4 ounce chopped fresh tomato1 can Muir Glen Organic Fire Roasted Diced Tomatoes1 can Great Northern Beans, rinsed well1 cup organic low sodium chicken broth12 large pitted black olives, sliced8 ounces Kale, washed and chopped1 cup of water
Directions
Heat up olive oil, add onions, garlic and sausage. Saute until onions begin to soften and slightly brown. Add kale, diced tomatoes, chopped fresh tomato, oregano, beans, broth and water. Let simmer for 30 minutes. Makes 6 1-cup servings.
