Banana Nut Muffins

Ingredients
2 Medium bananas (mashed)3/4 cup sugar1 egg (slightly beaten)1/2 cup melted butter1 tsp vanilla1 cup lowfat or nonfat vanilla yogurt1 tsp baking soda1 tsp baking powder1/2 tsp salt1 tsp cinnamon1/4 cup unsalted peanuts (crushed)1 1/2 cups flour I do half whole wheat and half all purpose usuallyBlueberries fresh or frozen (thawed) are also delicious in this recipe, I'd omit the peanuts if I did blueberries. Use 1/4 cup berries.
Directions
Preheat oven to 375. Use foil liners. In a bowl, mash bananas, add sugar, egg, butter, vanilla and yogurt, mix until smooth. In a separate bowl mix flours, baking powder, baking soda, salt and cinnamon. Add dry ingredient to wet ingredients and mix until well blended. Stir in nuts. Bake for 20 minutes or until lightly brown and golden. Makes 12 muffins.
