Whole Wheat Tortilla1/4 c tomato, sliced1/2 garlic clove1 tsp parsley1 c green bell peppers10 rings of onion1/2 c mushroom pieces or slices2 oz part skim mozzarella cheese
Preheat oven to 400 and place tortilla on oven rack for 5 - 10 minutes on each side or to your desired crispyness. Watch carefully to prevent burning on the edges. Remove tortilla qith tongs and place on cookie sheet. Apply tomato sauce (recipe below), cheese, onions, mushrooms, and bell peppers. Return to oven for 2 - 3 minutes or until cheese melts.
If you prefer softer vegetables, sautee before topping tortilla.
Tomato sauce:
Combine tomato, parsley, and garlic clove in food processor and pulse 4-5 times. Chunky tomato sauce is better for the crust of this pizza.
