Curried Lentils

Ingredients
1 c. lentils2 1/2 c. water2 beef bouillon cubes1 bay leaf1 t. salt1/4 c. oil1 large onion, chopped1 clove garlic, minced2 T. curry powderJuice of 1 lemonchopped parsley
Directions
Makes 4 servings

Combine lentils, water, bouillon, bay leaf and salt in saucepan. Bring to a boil and simmer 20 minutes.

Meanwhile: saute onion and garlic in oil. Add curry powder. Fry briefly. Add to cooked lentils w/ lemon juice and parsley.

Serve over rice.
