Chicken Stir Fry Semi-Homemade

Ingredients
2 TBS Olive Oil1 medium Onion, chopped8 oz Sliced Portabella Mushrooms3 cups Frozen Cooked Seasoned Chicken Breast Strips w/ rib meat2 cups Sugar Snap pea pods1.5 cups Matchstick Carrots8 oz Broccoli Cole Slaw1 tsp Sesame Oil1 tsp Ginger Oil2 envelopes Zatarain's Ready to Serve New Orleans Style Stir Fry Rice (each pack is 1.5 cups)Dash of Salt1/2 tsp Black Pepper, black1 tsp Cayenne Pepper1 tsp Ground Cumin1 tsp Emeril's Original Essence1 tsp Kikkoman Lite Soy Sauce
Directions
Heat olive oil for a few seconds in fry pan. Add onions and cook just shy of becoming translucent. Add mushrooms, frozen chicken strips, and pea pods. Let cook for a few minutes, while heating Zatarain's rice in microwave. Add carrots and broccoli slaw to pan and toss into chicken mixture. Add ginger oil & sesame oil. Add all spices and blend well. Let simmer for a few minutes and then add rice. Simmer for 5-10 minutes and add Lite Soy Sauce. Stir in well.
