2 cup Rice- Royal Blend Texmati White, Brown, Wild & Red Rice Rice Select (dry) 1 cup kernels Yellow Sweet Corn, Frozen 1 cup Peas, frozen 1 medium whole (2-3/5" dia) Red Ripe Tomatoes 0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 1 serving 1 Med. Green Bell Pepper 1.5 cup Goya Black Beans
Cook 2 cups of dry wild rice mixture with four cups of water until done (about 20 minutes). Meanwhile, thaw frozen peas and corn. Chop pepper, onion and tomato (your own desired size). Drain and rinse beans. Put all vegetable ingredients in large bowl. When rice is done, add to veggies and toss. Salt and pepper to taste. Serve warm, or on a bed of lettuce. Makes 9 one cup servings.
