Easy Cucumber Salad

Ingredients
~1 Large Cucumber (peeled if desired), chopped~2 tomatoes, chopped (either vine ripe or 1C cherry tomoatoes halved)~.1 cup (approx 2-3 TBS) crumbled reduced fat Feta, Gorgonzola or Bleu cheese, depending on your taste~2 tbs olive oil~2 tbs balsamic vinegar (I prefer white balsamic)~Add salt, pepper, parsley to taste~For a more Italian flavor, add basil and oregano to taste
Directions
Mix all ingredients in a large bowl. Chill before serving for best flavor but you can definitely eat it right after preparing!
Makes approximately 3 cups depending on size of vegetables and size they are chopped.
