Quinoa, Cauliflower and Brocolli

Ingredients
1.5 cup Organic Quinoa 1.5 head, small (4" dia) Cauliflower, chopped 12 cup Brocolli, chopped1 large Onions, diced.25 cup Pine Nuts 60 gram Raw Cashews, 1.75 gram almond, slivered 4 serving Dried Cranberries, 1.5 oz 3 cup Organic Vegetable Broth 1 tsp Salt 1 tsp Pepper, black
Directions
Cook the quinoa in vegetable broth, set aside when all broth is absorbed
Toast all nuts on a tray in 300 degree oven until golden brown
in a large skillet and using non-stick spray on medium heat grill diced onions until browned
Add about 1/3 cup water to onions
Add Cauliflower and Brocolli - cook until slightly tender
Add salt and pepper (more or less to taste)
Mix in cooked quinoa and cook for another 5 minutes
Add nuts and dried cranberries and heat thoroughly
