Lentil Stew

Ingredients
2 tbsp Coconut Oil1 medium onion, diced 1 large carrot, diced1 1/2 cups cooked lentils1/2 cup Salsa 3 cup Pacific Vegetable Broth2 Yukon Gold potatoes, diced
Directions
Saute onion and carrot in coconut oil. Add cooked lentils, salsa, broth, and raw potatoes. Cover and simmer 30 minutes. I don't add more salt, the broth has enough.
