Vegan Hoppin John

Ingredients
3 cup Aldi black eyed peas 3 cup Happy harvest basil garlic & oregano diced tomatoes 1 tbsp Olive Oil 1 medium (2-1/2" dia) Onions, raw 1 stalk, large (11"-12" long) Celery, raw 1 tsp Thyme, ground .5 tsp Paprika 1 tsp Salt 3 cup Vegetable Broth 2 serving 1 Med. Green Bell Pepper
Directions
Heat the olive oil over medium-high heat in a large pot. Add the onion, pepper, and celery. Sauté until the vegetables are soft, about 6 to 8 minutes. Add the thyme, paprika, and soaked/drained peas. Then add the vegetable broth. Bring mixture to a boil and reduce to a simmer. Add the beans and drained tomatoes Check and adjust the seasoning with black pepper, cayenne, and salt as needed.

Serving Size: Make about 6 large portions
