Chicken "Zoodle" Soup, Low Carb

Ingredients
1 lb. Chicken Breast, cooked, cut up12 oz green beans, ends snipped & cut in thirds1/2 small (about 4-1/2" dia) head of fresh cabbage, chopped4 large (11"-12" long) stalks of raw celery, chopped1/2 large raw onions, chopped1 medium carrot, chopped8 medium white mushrooms, sliced1 clove garlic, minced 32 oz package of organic free range chicken broth, low sodium1 tsp black pepper1 tsp salt 1 tsp poultry seasoning 1 tsp parsley1 tsp xanthan gum (optional)2 cups zucchini, cut into match stick sized strips
Directions
Place chicken, cabbage, onion, green beans, celery, carrot, mushrooms and garlic into a large slow cooker. Pour in chicken broth, add water as needed to cover. Season with poultry seasoning, parsley, salt and pepper. Cover and cook on low setting for 6 to 8 hours or on high setting for 3 to 4 hours. Shortly before serving, sprinkle in xanthan gum to thicken. Cut zucchini into match stick sized strips. Add to hot soup, stir & serve.

    This is a great recipe for using up a CSA basket! Chock full of vegetables and it makes a lot. I din't add xanthan and I added more salt and pepper just before serving. It made about 8 large (1 1/2 cup) servings. - 8/15/16
